Easy Pesto Zoodles Recipe
It’s no secret that I am obsessed with zoodles aka zucchini noodles! In all honesty, I’m all about healthy, simple and delicious recipes, and my easy pesto zoodles definitely fit the bill. Let’s jump right into this recipe.
1-2 Cups Spinach
2 Cups Basil Leafs
1/2 Cup Cherry Tomatoes
1/2 Cup Nuts/ Seeds of Choice
4 Garlic Cloves
1/2 Red Onion
2 TSP Lemon Juice
1/3 Cup Olive Oil
1/4 Cup Parmesan Cheese
Dash Salt & Pepper
Cut the ends off of the zucchinis. Spiralize or use julienne peeler to slice zucchini into noodles. Squeeze zoodles in cheese cloth or in between paper towels to remove excess water.
Chop & sauté onion and 2 garlic cloves in 2 TBSP of olive oil. Once fragrant add Zoodles with pinch of salt & pepper.
Add basil, garlic, nuts, lemon juice, salt and parmesan cheese to the food processor or blender. Blend until a paste forms while slowly adding the olive oil a little at a time. Taste and set aside.
Chop spinach and cherries, and add to the zoodles. Cook zoodles until tender. About 30 minutes total.
Bring a large pot of salted water to a boil + prepare pasts based on the package instructions. Drain + set aside.
Plate zoodles and pour the pesto on top with a bit more parmesan cheese & enjoy!
